Summer Recipies with Chicken

You might wonder why we’re only talking about chicken and not other meats. Because Red Meat has been shown to be hot in studies, adding it to your cooling recipe may have the opposite effect. It’s fine to eat red meat every now and then, but we’re here to talk about recipes that you can make all summer long, not just for cheat meals.

Lemon Chicken

Begin with a few lemon peels. Just make sure to carefully remove all of the debris from the peel, as this is what gives lemon peels their bitter flavour. Slice the lemon peels and combine with one tablespoon sugar, one cup white vinegar, one tablespoon honey, and one tablespoon custard powder in a mixing bowl. To make one chicken breast tender, coarsely chop it and thoroughly beat it. Add your chicken breast, salt, 1 cup cooking wine, a pinch of black pepper, 1 tablespoon corn starch, 1 tablespoon custard, and 1 egg to a separate bowl. Mix everything together until it forms a coating on the chicken, then dust it with flour and deep fry it in peanut oil until crispy. Now brush your chicken with the lemon glaze you made earlier, and your tasty and filling chicken is ready, oozing with chicken and lemon flavours.

Chicken Piccata

Preheat the oven to 350°F. Butterfly your chicken breast and pound it flat. Coat your chicken in flour and season it with salt and pepper before cooking it in a pan for 3-4 minutes. Add some oil to the same pan and toss in some capers until your kitchen smells like ki capers. Now add some chicken broth, a squeeze of lemon juice, and cook until the liquid has reduced to half its original volume, then add three tablespoons of cold butter and whisk until the butter has melted into the broth. Add your previously cooked chicken breast and coat it in the glaze; your chicken is now ready to be served. Put your chicken breast on a plate with a side of buttered spaghetti and some chopped cilantro on top, and you’ve got yourself a refreshing chicken piccata, a great summer lunch recipe.

Chicken Stir-fries

This recipe comes from Mr.Gordan Ramsay himself, so it’s sure to be delicious, so let’s get started; Cut your chicken breast into small strips, then slice some broccoli and garlic. Now, heat some olive oil in a pan and stir fry your chicken with some salt and lemon juice, as well as all of your vegetables. Your chicken is ready to eat, and you can serve it with rice noodles or rice if desired.
